Gouldsburger’s Serves Up ‘Good Food Done Right’ at Franklin’s Table Food Hall

The Shop Penn retail district is pleased to announce the addition of Gouldsburger’s, a casual burger concept focused on providing high-quality food with fresh ingredients, to Franklin’s Table Food Hall. Opened in 2018, the food hall has since been delivering regional deliciousness and culturally inspired cuisine that has something for everyone who comes to the table for a taste. Gouldsburger’s will offer their signature burgers, cheesesteaks, uncured grass-fed beef hot dogs, vegetarian and gluten free items, among other offerings, at their new location on Penn’s campus.  

“Franklin’s Table contains a diverse mix of eateries under one roof in the heart of the  University’s campus,” explains Ed Datz, Penn’s Executive Director of Real Estate. “Gouldsburger’s will provide a fresh take on local favorites for both meat eaters and vegetarians, and it will be a great addition to this popular dining destination with stalls catering to every craving.” 

Gouldsburger’s co-owners and chefs David Murray and Walter Gouldsbury, opened their first concept together , Crumb Sandwich Joint, in Haddonfield, NJ in 2021 and  followed with two other locations the following year in Bordentown, NJ and Medford, NJ.  In 2023, Murray and Gouldsbury decided to get into the burger and cheesesteak game and opened their flagship location of Gouldsburger’s in Haddonfield, and further expanded with opening a Gouldsburger’s Express at Two Logan Square (18th & Arch Street)  in Philadelphia in 2024.  The pair are opening a fourth Gouldsburger’s location in Medford, NJ, and are also franchising the concept.

“We are very excited to be a part of Franklin’s Table and join the high-quality eateries that already exist at the hall.  We are very eager to bring our food to the students, faculty, and staff at Penn and the University City neighborhood,” said Gouldsbury.

Murray added “It is truly an honor to be a part of the Penn community and expand our presence in Philadelphia.” 

The Gouldsburger’s at Franklin’s Table will operate as an express model to cater to the busy schedules of its patrons. The menu offerings include their burgers made with two  USDA Prime beef patties , cheesesteaks on proprietary seeded everything rolls, breakfast sandwiches served all day, all natural grass fed beef hot dogs, salads, and more.  Gouldsburger’s prides themselves on using fresh ingredients that you can feel good about eating and strives to be the best, right down to the equipment they use and the techniques employed. Gouldsburger’s has a dedicated vegetarian griddle to cook their vegan and vegetarian food options, such as their house made beet burger and a vegetarian mushroom cheesesteak.  Anything on the menu can be made gluten free, and the sides offered, such as the house-made onion rings and french fries are also gluten free and fried in 100% olive oil in a dedicated  gluten free fryer.  

Gouldsburger’s is anticipated to open its Franklin’s Table location with their ‘Good Food Done Right’ in November.
